I bake 40 loaves before the sun is up, from a starter called Clint who is older than my car. Here I post the schedules, scores and recipes I never put on the shop's sign.

Meet Clint, my nine-year-old starter
Clint came from a jar my grandmother kept on top of the fridge in Porto. I took a spoonful when I moved, nine years ago, and fed him in a borrowed kitchen for a month before I trusted him.
He lives in the fridge door now and comes out the night before a bake. Rye flour, water at 26 °C, and he doubles in about five hours. If he smells like nail polish, he is hungry; if he smells like yogurt, he is ready.

Tuesday's bake
Forty loaves out by 6:40. One came out shaped like a boot because I sneezed while shaping it. It is the one I ate, with butter, at 6:45.
